Completely busy it seems....
Labels: Garden, stables 4 commentsThings have settled down with my son for the time being but I've been so stinking busy. We have been working to get the garden ready. Most of the planter boxes are built. We leveled the ground and put the boxes in. We sifted through the dirt we had dug up with the bobcat to get all the weeds out of it. Alison and I have been spending a lot of time at the stables getting ready for Spring Break which starts on Saturday. Alison has been getting all the horses and grooming them and trimming their manes. I've been having trouble having time to get dinner cooked most nights! Tomorrow, is a trip to the grocery store. Next week will be even busier and it will be a primer for us for what the summer will be like. I'm going to be trying to work at the stables as well as get our work done out here. I guess we'll get it done...it can't be worse than last summer when we were working 7 days at the stables and getting our 24 hours a week of volunteer time in at the park. The park hours were a lot more flexible though. We could get those whenever we wanted. I'll try to check back in here soon!

Wow. I only wish I could start to garden.We just had a storm rip though here. I have more snow on the ground.
By may I can start to get flowers put out.
For your meals could you pre cook some ingredients so that it cuts down on prep time?
I have a good recipe for you, Greek chicken.
sauté chicken breasts to slightly brown them , adding alittle lemon juice and Greek seasoning to them. then throw them into a casserole dish, toss in a little lemon juice , maybe a little more seasoning, and add water so they don't burn.
Cover and bake at 350 for a hour or till done. very low fat. Goes great in salad.

You don't live near where the tornadoes hit, do you? That was terrible! We're very excited about the garden!
Thanks for the recipe! I could get that ready ahead of time and throw in the oven when we get home. I just have to get in a different mode for meals. I have to be prepared to think ahead. Like today, I will start planning and pre-preparing for what we will eat tomorrow night.

I live in Saskatchewan, Canada.
We do have tornadoes but nothing like what you guys have! We saw one touch down four miles from our place once, too close for comfort. We also looked straight up our bedroom window into a turning funnel cloud.
Glad you liked the recipe. Don't over use the lemon juice.Wish I could play in the dirt!
