Frugal Recipes - Tortilla Soup
Labels: recipes 1 commentsI'm on a quest to find easy frugal recipes. We have been rotating the same meals since we moved into the RV and I'm craving something new. Not only do the recipes have to be frugal but I don't prefer oven recipes because I live in a RV. Since I've received interest in the posting recipes, I'm going to start posting the recipes I use and the new ones I find. I think I have posted some of them in the past but I can't remember which ones so there may be a few repeats. I will start tagging the recipe posts "Recipes" from here on so that I can remember which Ones I've posted from now on and also they will be easy to find for everyone else!
The first one I will post is this yummy tortilla soup recipe. This may be a repeat but at least I can find it now.
Tortilla Soup
Fry 8 strips of bacon and save grease.
Saute 1/2 cup chopped onion in bacon grease.
Add 1 can tomatoes and green chilis
Add 1 can of chicken broth (if you have your own broth, its even better)
Add 2 cans of refried beans (we love the black refried beans)
Add water as needed for desired soup consistency. Should be creamy.
Add tsp of garlic powder and I even throw in some onion powder...can add these seasonings to your own personal taste. Add your crunched up bacon.
My family likes to put cheese on top but its not necessary.
I buy corn tortillas and cut them into chip sized peices and fry them in oil. This really makes the soup better than using store bought chips and probably a whole lot cheaper too!
Tonight, I am on the internet on the look-out for recipes. Hopefully, I will come up with something! I am planning meals for the week and getting my shopping list ready for tomorrow.

Oh I like this idea, posting recipes so you can find them easily. This looks yummy! I have a couple of great crock-pot recipes. Maybe I will post one or two in the next few days!! Hope you are having a great 4th of July weekend!
